Mushrooms in the News: 07-19-2022

FOX31 in Denver featured a lengthy kitchen segment on mushrooms helping stretch your grocery dollars in the face of rising food costs. In the segment, RD Mackenzie Burgess noted that mushrooms can help with meal prep by lengthening meals: “Mushrooms are the perfect ingredient because they allow the more expensive ingredients, like meat, to last longer.” She shared three recipes, and also shared that she freezes caramelized mushrooms in ice trays for easy access to add to recipes like spaghetti.

Madison, Wisconsin’s city lifestyle magazine spotlighted “10 Reasons We’re in Mushroom Mania,” offering up the New York Times naming mushrooms the “Ingredient of the Year,” as well as mushroom versatility, umami, and support from local chefs and growers. Rachael Ray also shared her recipe for a Portabella Philly and Garlic Bread Waffle Fries.
