Mushrooms in the News: 01-09-2023

Over the past two weeks, mushrooms earned multiple placements on 2023 food trend forecasts – from foodservice to business to general food media. “Mushrooms are trending because they hold a unique and solid position at the intersection of flavor and wellness,” Catersource noted. AllRecipes called out shiitakes as “the latest plant-based meat sub.”  Forbes, In the Know and Spoon University also highlighted mushrooms on trend lists. 

With wellness front of mind for the new year, mushrooms were featured as a healthy option to help consumers meet their dietary goals. The Washington Post shared an article about strategies for incorporating more vegetables, while AARP cites the Blend as a way to include mushrooms. Eating Well partnered noted: “Fungi are your friends! Whether you’re roasting them with balsamic and Parmesan cheese, baking them in a savory casserole or stirring them into a comforting pasta dinner, you can’t go wrong with this delicious ingredient…Plus, some mushrooms are also sources of valuable vitamin D.”

Combining two key messages (nutrition and budget friendly) Insider also highlighted mushrooms as a way to incorporate nutrition while also extending grocery dollars: “Budget-friendly foods full of nutrients include potatoes, eggs, chickpeas, oats, and mushrooms.”
