The Washington Post recently highlighted specialty mushrooms recent boom stating, “People are eager for cheaper, more accessible meat substitutes, and more unusual mushroom varieties are appearing at farmers markets and on restaurant menus. The Agriculture Department reported that specialty mushroom sales in the 2021-2022 growing season rose 32 percent over the previous year.”
Perishable News and Produce Blue Book highlighted Checkers & Rally’s newest menu item featuring mushrooms. The publication shared a quote from Pam Smith, foodservice consultant for the Mushroom Council, stating, “Mushrooms are sprouting on menus all throughout the nation this spring, and one of the most delectable are these incredibly delicious items offered by Checkers and Rally’s, which is such a beloved chain.”
