Winner of the Kids Eat Mushrooms, Too! Recipe Contest for CACFP! My preschoolers loved it, and we named it together. I did add cheese to some of theirs if desired. A parent brought in farm fresh eggs and we added all the other ingredients to make this delicious egg cake!

- 2 cups, Ham, diced
- 1 cup, Mushrooms, fresh
- 1 can, Tomatoes, diced
