Mushrooms in the News: 01-30-2023

Mushrooms continue to earn widespread attention as a 2023 food trend. KDVR – Denver last week featured a registered dietitian proclaiming mushrooms at the top of her 2023 food trends, calling them out for nutrition, Blend-ability, value  and sustainability. 

Moving deep into the football playoff season, mushrooms made headlines in multiple Big Game recipe roundups showcasing their versatility from burgers to tacos in Good Housekeeping and Today. 

On the nutrition side, the Mayo Clinic shared a broad mushroom nutrition and recipe profile. 

Restaurant Hospitality shared that mushrooms form the main filling of a vegan sushi roll at Negroni Bar & Bistro featured in New on the Menu: Corn Ribs and Mushroom Maki.
