Nation’s Restaurant News highlighted the top 10 food trends based on its observations at the 2023 National Restaurant Association Show – with mushrooms among the list. “Plant-based proteins may dominate the headlines, but they’re not the only ingredients and products on menus,” with the article also noting “mushrooms’ umami flavor and meaty textures make them a hearty meat substitute.”

The Seattle Times this week reported on the “rise and fall” of the faux meat burger. With cell-based meat trending down at retail, the reporter recommends readers instead consider mushroom blended burgers and features a photo and recipe of our classic blended burger dish: “If you do eat meat but are trying to eat less of it when you do have it, blended burgers might be right up your alley. Blended burgers add finely chopped mushrooms to ground beef before cooking, adding flavor and nutrients. This also works for meatloaf and meatballs.”

With the year’s biggest grilling day (July 4) just around the corner, grilling professionals in the (Minneapolis) Star Tribune recommended mushrooms: “The veggie I’ve found the easiest to cook with would be a great portabella mushroom marinated in soy sauce, balsamic vinegar, olive oil, and your favorite herbs. It makes for a great veggie burger or side. It’s nearly impossible to ruin a mushroom.”
