The New York Times this week presents an extensive feature on mushrooms on the menu at restaurants throughout the nation, focusing on mushrooms taking the starring role in key dishes. “Increasingly, an epic mushroom main course is becoming as essential as a steak or fillet of salmon on restaurant menus around the country. As restaurants around the country make the humble mushroom an essential main dish, home cooks can learn a few tricks for dinner, too.”

Eat This, Not That predicts mushrooms will be a major trend in restaurants in 2025 – citing the National Restaurant Association’s recent top ingredients list. The appeal? Versatility. Mushrooms are used in meat substitutes, desserts and beverages.
