This is a healthy, low sugar breakfast quesadilla that every student will enjoy. From the Foundation of Fresh Produce, Have a Plant has created several veggie school breakfast recipes!


Ingredients

Scale
  • 2.5 lb., Mushrooms, fresh, diced
  • 2.5 lb., Bell Pepper, Red, diced
  • 1/2 tsp., Salt
  • 1 tsp., Black Pepper
  • 3 1/4 lb., Eggs, frozen
  • 1 1/2 lb., Cheese, cheddar, shredded
  • 50 each, flour tortillas
