Breakfast Vegetable Quesadilla

This is a healthy, low sugar breakfast quesadilla that every student will enjoy. From the Foundation of Fresh Produce, Have a Plant has created several veggie school breakfast recipes!
Ingredients
- 2.5 lb., Mushrooms, fresh, diced
- 2.5 lb., Bell Pepper, Red, diced
- 1/2 tsp., Salt
- 1 tsp., Black Pepper
- 3 1/4 lb., Eggs, frozen
- 1 1/2 lb., Cheese, cheddar, shredded
- 50 each, flour tortillas
