  • 12 lb fresh mushrooms
  • 2 lb + 8 ounces butter
  • 5 lb onions, diced
  • 3/4 cup paprika
  • 3/4 cup soy sauce, lower sodium
  • 12 lb + chicken broth, lower sodium
  • 3 quart + 1/2 cup milk, low-fat
  • 1 quart flour
  • 1/4 cup salt
  • 3/4 cup ground pepper
  • 1/2 cup lemon juice
  • 2 cup + 1/2 cup fresh parsley
  • 1 quart + 1 cup sour cream, reduced-fat
